I have accepted assignment of a ticket that has a due date assigned and is not showing. I would like that date to appear when checking tasks "assigned to me". How do I enter the date?

Welcome to the community.
You mean in your dashboard by "assigned to me". If so, in this gagdet click in the 3 dot on the right corner of the gadget then edit. You will be able to add/remove field.
If you can't, ask you dashboard admin to give you the permission to edit the dasboard.
