In the 'old' Jira view, we could update the 'assignee' to the ticket in the field on the top left.
In the new Jira view, this does not appear - please would you confirm how we update the 'assignee' in the new view.

You should still be able to edit the Assignee in the top right:
If you can't find the Assignee field, you may need to go to the project settings > Issue layout to add the Assignee field to the screen (see the related documentation here).
