I have a dashboard listing tasks and I would like to put a date and or time stamp on it when I print.

If you're printing the page by doing a Print page from your browser there will be a Header and footer option to add the date to the print out int he print settings.
As an example in chrome it is under "Print > More settings > Options > Header and Footer" and it will add the date and page title to the header and the Page URL to the footer like this:
However if you are using a third part tool from the marketplace to export a dashboard such as the ones listed here you would need to reach out to the add-on vendor to see if the capability exists in the tool directly.
