I was wondering if I would be able to create a private task within JIRA?
If not, would it be better to create a project for a user and apply restrictions purely to them so that the user can only create, view and edit tasks on that project for them?
Hi @Lewis Pugsley ,
private tasks can be created using Issue Security Field. Take a look to the following guide https://confluence.atlassian.com/adminjiraserver/configuring-issue-level-security-938847117.html

I think you can hide the task from some people.. but I am not sure. But you can create a different account for the user and limit his actions there..
