I'm trying to determine who created a specific custom field that we have. Is there a way to view this information?

Hi there - I would be interested in this for Jira Cloud - ie. when a user created, updated, deleted a field. Possible? Or is there an existing feature request if not? Thank you

Jira Cloud does have the Audit log option.
General Configuration >> Troubleshooting and support >> Audit Log.
Here you can look filter and search custom field creation,deletion etc.

If you're interested in changes for issue fields (Key, Summary, Status, Priority, etc), you can check issue history in the Activity section while opening each issue you're interested in.
To get change history for the list of issues, you can try the Issue History plugin (developed by my team). There you can monitor who has updated or deleted an issue.
