What do you mean by end of life for server licenses?
Atlassian is no longer selling new Server licenses. You can now buy only a Data Center license for on-premise products.
Existing Server licenses can be renewed for new expiration dates of no later than Feb. 15, 2024.
Support for products with a Server license will end on Feb. 15, 2024.

And what will happen on Feb 15 with existing installations? I understand that there will be no support or updates, but - if I'll be still able to use the installation "as is", keep all existing data or create new issues in my old installation?

Welcome to the Atlassian community.
Jira Server licenses (not Data Center licenses) are perpetual. You can continue to use the Jira software, unsupported, after the license expires.
If you are using third party apps you should contact the vendor of each of those apps to find out what happens with their app when the app-specific license expires.
