R stands for the number of required hours you expect someone to work in the current period (week or month). This is determined by that person's work schedule, combined with the holiday schedule he/she is assigned to.
The pink color does indeed represent a non-working day or holiday and this is determined by the holiday schedule I referred to earlier. You can find both work and holiday schemes in Tempo settings. I recommend you read the product documentation to learn more about how to configure these schemes in detail.
