As you can see in the below screen shot, the auto replies are being sent from "Inquiries1". When I first created this project, this was the name of the Project, but I have since changed it. How do I get it changed in the emails?

The "From" email address goes with the name of the customer portal and not the project.
By default, when we create the project, the portal receives the same name, but we can change it to have an internal name and a public name.
If it's a classic project, you can fix this by going to Project settings > Portal settings and change the name under "Service desk information.
If it's a next-gen project, go to Project settings > Channels > Customer portal.
