So that you can put a priority number for the task, is it possible?
You can add a custom field, like others have suggested.
The problem is that you then can't inline edit the sub-priority from the "Filter" view in Jira Software nor the "Queue" view in Jira Service Management (because you can't inline edit custom fields) - which kind of defeats the purpose.
We want to be able to sort within a given priority, *while* looking at the list - not open each ticket just to change how it will appear on the list

Can you provide more information about your use case?
It is possible to add a custom number field, and you could use that to assign a numeric priority value to the issue.
You can also change the visible label of the built in priorities to display a number instead of a word.

I need to assign a number, a priority number, since the average priority also has its own order, I can have 10 tasks with an average priority, but there is an order of importance among them

How do you expect to use that additional level of prioritization? Are you anticipating using that as part of the sorting of your issues in your scrum/kanban board?
If you want to assign an explicit "sub priority" to the issues you would need to add your own custom number field.

Which item are you asking about specifically? I mentioned two options in my first response - a custom field, or modifying the names of the values in the built in Priority field.
If you are talking about modifying the names of the values in the built in Priority field, you get to that through these selections:

When you create a query/filter to select issues to display you can specify the fields to use for sorting the issues in either descending or ascending order. When using the built in Priority field for sorting the order will be based on the order of values in the screen referenced above (where you can change the name and order of the Priority values).
Note that changes on that screen are global and will affect ALL Projects.
