Probably you are trying to perform a bulk update. Please verify that Fix Version field is on edit screen for all issue types/projects that you are trying to update.
THis should fix your problem.

I‘m want to change only one Epic , the EPIC screens view settings in project like this:
When I edit a Epic, there is no Fix Version field, is there a configration i missed?
Please verify that Fix Version has not be hidden for epic in the related field configuration
