how to give a user access to only one project???

Use a permission scheme, based on roles.

Make that user a member of Role X (assuming Role X has browse project Permission in the Permission Scheme).

On project configuration summary

you can find the Permission Scheme that this project is using. If not sure about the impact, maybe just create a new Permission Scheme and assign that to the project.

 

From there, you can see certain permissions like , Browse project, Comment, Create ,etc etc
