Good morning, we have some employees in the company who should not get full access to Jira but only to individual projects or issues. I tried to solve the problem with authorization schemes, but then the employees could see and edit all projects. Is there another solution here? Thanks a lot!

Yes, one solution is to control access to the project with the Permission scheme. If the users have access to projects they shouldn't, you need to modify that Permission Scheme to change the permissions for the Browse Project permission.
It probably is that the permission using a project role which includes all users, or the permission has the ability for any logged in user to see the Browse Project permission.
