Quiero crear un campo que se actualize de manera automatica a lo largo del workflow y me indique el % de completitud que lleva el proyecto

Si es un company proyect, tenes que primero crear el custom field con estas instrucciones: https://support.atlassian.com/jira-cloud-administration/docs/create-a-custom-field/ . En este ejemplo pondría un campo númerico.
Despues podes usar Jira Automation que cada vez que va a un nuevo status, por ejemplo en "Planificación", el campo se pone a 25%.
Automation:
- Trigger: Transition Issue when it goes to a specific status
- Action: Edit field value
