I am not a system admin, but I have been working closely with the admins to figure out a solution for a problem we've been facing.
We have a few projects and due to some unknown reason, all the backlogs and sprints have been erased/cleared. Is there any way in which all the backlogs can be recovered?

A backlog is a view of a selection of issues, it is not a container (nor is the board the backlog is part of).
If a load of issues have disappeared from a backlog, then
"Sprint erased" is more simple - it's either that the permission to use the board has been removed (in which case you wouldn't be able to get into the backlog at all), or a human has chosen to delete the sprints.
You'll note that all of those are actions a person has done. Jira does not lose or hide issues without being told to by someone.
Adding to @Nic Brough -Adaptavist- 's list of things that can cause issues to "disappear" from the backlog:
- the issue has been moved to another project or a value in the issue has been updated so that the issue no longer matches the criteria of the board's filter.
