I need to do a backup to a jira cloud project, i tried with backup manager but the project isn't appears on the list, so, Does anyone knows another way to create a backup to a jira cloud project?
Backup Manager doesn't provide backups for single projects. It does a backup of your entire site.
And the list of projects shown there are only the Team Managed (previously known as "next-gen") projects. It is not a complete list of projects.
For what purpose are you trying to create a back up of a single project? What do you expect the backup to contain (i.e. only issue data, or also project configuration information) and how would you expect to be able to use that backup?

The only other option I can think of is Export/Import the Issue Data
1. Have the client create a new empty project in their instance and configure it identically to your project.
2. Export the issue data from your project to CSV, and have the issue data imported into the project on the client's instance.
This is not a full copy of all data. This will not copy issue history, issue links, or attachments. It is possible to create the parent/child relationships between epics and child issues, and between issues and sub-tasks, by manipulating the import file before import. And if you don't want all the issues reset to To Do, the importer will have to be importing the data under the System > External System Import option.
