What exactly is Acceptance Criteria in your case? Is it a Text Area field? If so, you can change the renderer of the field to Wiki Style Renderer as explained at https://confluence.atlassian.com/display/JIRA/Configuring+Renderers

If want to go beyond text formatting for acceptance criteria and head to towards the BDD style then look at Behave Pro
