×Probably an absolute beginners question, but how can I revert that? I really just want the issues to go back to the three different sprints that they were assigned to earlier.

That's unfortunate 😅 - I don't like to be the bearer of bad news, but there isn't an undo button in Jira to roll back a change like this.
In some cases you could use history searches in JQL to retrieve previous values of (a set of issues), but unfortunately the sprint field that you updated does not support this. So basically in this case you will need to drag all issues into the sprint they were manually.
One positive, though: Jira tracks any updates to issues and displays them in the history tab at the bottom of the issue detail view:
So in your board backlog view, when you click on an issue the detail is displayed on the right hand side. Set the bottom section there to history to view the updated sprint, so you know what the previous sprint was. Once you know, drag the issue back to the original sprint.
