I am currently trying to assign a field on a transition screen for a transition to the same condition to lock/unlock specific fields for e.g. Project Managers. I have found some sites explaining that, but it simply does not work, when I set it up as described, I feel like I am doing it wrong, is anyone currently doing this? Is it still possible or was this maybe patched out?
My end goal is a bit different tho. I just wanted to assign this (if it works properly) in a reverse way, like locking everything in every state and unblocking all the required (custom) fields. At this point I think I might be better off with an addon.

Welcome to the community.
So as I understand you have set properties on workflow statuses.
So if the work item is in a certain status, it can't be edited.
You will have to create transitions, within the transition have a screen that contains the fields that need or can be edited.
Set a condition or conditions on the transition which project role, group or user can execute this transition.
You can make multiple transitions if you need to differentiate what needs or can be edited by a specific role, group or user.

thank you for your reply and sorry for the late response. I decided to purge my sandbox and copy the prod site to start from the scratch and finally got it working. The workaround is still practical.

I think this would be possible with native functionality. If I understand you correctly you only want certain pople to be able to change or update the fields during the transition?

thank you for your reply! I will try it as you described it.
Basically the users just need custom fields to be "read-only" once they start working on the issue. They seem to require this for compliance reasons. Once only a certain Role/Group can edit it, I will move it a new role without users so no one can edit it any further.
