Why is the field selector for my timelineboard not available?

I'm in a JIRA Cloud premium plan,

I cannot add my default fields as a column in my timeline view of a board in my project space.
According to Rovo, I'm supposed to be able to add fields in my visualisation of my timeline board.

This is the known limitation of the native Timeline since it's originally designed as a Gantt-style date visualization. With that said, the Timeline view on a Jira Cloud board (including Premium) does not support adding custom field columns. 

You can try the workaround of using the List view for field columns: The List view on the board has a field selector (the + column button) where you can add any field as a column. If you need to see custom fields alongside your issues, this is the right view.

Besides that, you can try our app - GanttTable. I'm a product marketer of DevSamurai, the developer of GanttTable. The reason is that GanttTable combines a spreadsheet-style table with a Gantt timeline, supports Smart Columns with custom fields and even custom formulas, and is specifically designed for your use case.

the thing is, the function to add fields in a timeline view was available, but seems to haven been taken away.
Can anybody share this experience?

There have been recent Timeline changes around field columns such as Assignee and Status, so it is possible you saw one of those newer timeline columns, an early-access/rolling-out experience, or a different view such as Plans or List view.
