I have marked some stories/tasks as done/delivered in my current sprint and backlog and they are still appearing. Is there a trick to making them move off of the backlog and sprints?

How are you "marking them as done/delivered"?  Are the issues in the right-hand column of the board when you close your sprint?

Hello,

You define issues, which are shown in the backlog, by the filter, which you provide in the general tab of the board configuration. You should exclude such issues from the JQL query and these issues will not be shown in the backlog. Or you can create a separate status for such issues and do not include issues with the status in the filter.
