If you are talking about issue activities, you can use the activity stream gadget in your dashboard to return all the activities performed in your Jira, optionally filtering it to return information from specific projects or issues you need:

Now, if you want a more complete timeline where you can customize to see reports and specific information you need, the following apps might help you achieve that:

You can check one from these two plugins from Atlassian Marketplace:
- Time Between Statuses - let you set the start/stop/pause statuses for timer preferences, set time limits and configure notifications when exceeded time limits

- SLA Time and Repost - let us specify statuses as a trigger to start/stop/pause your SLA and add a timeline
