When displaying total logged time, does 1 week equal 40 hours (5x8) or 168 hours (7x24)

Don't know.  Depends on your settings in the time-tracking section (the documentation you've pointed to is about those settings).  If you set it up to have a 40 hour week, then it's 40 hours.
