When I move a kanban ticket from to-do to in-progess the ticket number gets a line through it as if the ticket is done.

Can you provide a screen image showing the mapping of Status values to Columns for your board?
Can you provide a screen image of that ticket showing the Status section; i.e.
Do you see a green checkmark and text to the right of the Status button, as I am pointing to with the red arrow in my image?
No. When ever we move any tickets to in progress there is a line through the ticket number.

Can you clarify which of my questions you were answering with your "No" response?
Can you provide a screen image of one of those In Progress issues showing just the upper right corner above the Details, so we can see the Status button and the area around it?

I cannot share screen shot curretly, but when we move from TO DO to IN PROGRESS the ticket itself say "IN PROGRESS". It doe not Check Done as your screen shot shows :)

It may not say "Done" to the right of the checkmark, but does it show the green check mark to the right of the Status button showing "In Progress"?
1. The current status of the issue. What is the text shown here and what is the color of the block?

Based on that image you are using Jira Data Center, not Jira Cloud. My screen images are from Jira Cloud.
The reason that your issues are getting a strike through when moved to the In Progress status is that the Resolution field is being set on them.
That can happen in two ways:
You will need to work with a Jira Administrator to get the workflow updated to correct this problem.
A post function to clear the Resolution field would look like this:
