In our company we are using Data centers JIRA licenses. We were wondering about the behaviour of the software after the end of the support (after January).
What will happen ? Do you think we will be able to access on "read only" to the content ?

Are you talking about the general stop of support of Jira Server or your own Jira licenses which you will no longer renew?
If the first:
If you have JIRA Datacenter licenses, nothing will change. DC is still supported and will remain so until further notice.
If you have JIRA Server licenses, those will stop being supported. As the instance license is perpetual, your instance will continue to run without any issues but there will no longer be any support/bugfixes/security issue fixing/... on those environments.
If however, you mean the second (your licenses expire), then your Datacenter environment will indeed go in to read-only as it is subscription based.
Jira Server licenses you will just lose the ability to upgrade/log support calls/.. but it will continue to function
