I cannot see the datatype scripted filed in jira while creating the custom filed for my script runner.
Scriptrunner for Jira Cloud does not have scripted field types (it can't - Cloud does not let it). You have to use one of the standard custom field types and then write listener or post-function scripts that update those custom fields.

Scripted fields can now be supported by Cloud, but it does it differently to Server, and they're accessed via Admin -> Scriptrunner -> Scripted Fields, not by adding a field in the main list.

By the way, I've tried to put one of these scripted fields on the sidebar but if I want to see it I always have to click "Open Scripted Fields" before that. It's a bit clumsy, I mean, isn't there a way to see the scripted fields on the issue sidebar straight away without having to click a button? The only alternative that comes to my mind would be putting the field in the issue content section.

I'm afraid not - that's down to the way Jira Cloud works, not SR.
I know we're getting places with getting Atlassian Cloud to enable SR to be more clever, but I don't know where we are with UI changes like that.
