I have tried to search for answers, but I could not find anything. Is this related to the recent UI update? At first sight, there does not seem to be a relation with the informtion in the ticket. The purple background color appears for both Task and Epic Parent items. See picture below.
That appears to be the Epic / parent color, following upwards in the parent chain.
If you select one of those Task items, I suspect it has a parent Epic...and that Epic has the color selected.

That is correct. I did notice that the color is related to the color of the ticket. However, some tickets like DT-979 do not have a color at all. If I try to change the color of a blue "Task" from purple to something else, it get's changed back to purple automatically.

And, you have already checked for formatting rules based on the suggestion from @Carlos Garcia Navarro ...which was my next suggestion.
Your test changing the color and it changed back may indicate an automation rule running. When you look at the change history for that Task, do you notice any edits from the Automation for Jira user?

I noticed the change after Jira rolled out it's UI update. I have not applied any specific rules.
