I'd like to generate a listing of projects based on whether they are a classic software project or a next-gen project type.  The Manage Project page displays the different project types (Classic or Next-Gen) but does not let filter by these types to get a true count.  Has anyone found a way to determine this without having to manually go through the entire list

Hello! We understand that you’re using both Classic projects and Next-Gen projects for your organisation. Would you help us learn more about you and your use cases? A one-hour chat with you would be immensely helpful, and we’ll send you a $100 gift card as thanks. If you’re interested, please email me at echan@atlassian.com.

In regards to your question: yep I do regret to say that there’s currently no direct, user-friendly way to get a list of projects that are Classic or Next-Gen. One workaround is to use the project API endpoint, which lists all the projects and their key properties – such as the project key, project name, project type etc.

<your domain>.atlassian.net/rest/api/3/project

The style property tells you whether it’s a "classic" project or a "next-gen" project.

there isn't a way to do that unfortunately. I do wish they would present a count that would change based upon filter applied. You might want to reach out to support or use the feedback link to let Atlassian know of the requirement.
