To be honest, what happens totally depends on how permissions to projects are configured. That lies in the hands of the people managing your company's Jira administrator(s).
It is e.g. possible to grant access to a Jira project to any logged in user. That means that everyone with a login to Jira will be able to access such a project. When your membership of a group changes, that will not have any impact at all to your permissions in such a project in any way.
However, it is quite common that project access is indeed restricted to one/more specific groups of users. Again, that is because your Jira admin has set things up that way. In that case, if you are removed from the group(s) that have access to a project, you will no longer be able to view the issues in the project, you won't receive notifications anymore nor be able to interact with anything inside the project at all.
And that brings me to the last point. Permissions in a Jira project are much more granular than just being able to access a project. Being able to create an issue, edit an issue, add a comment to an issue, linking an issue to other issues, adding attachments, voting for an issue, etc are all different permissions (and there's a lot more). While you may still have access to view the issues in a project, it may well be that there's other permissions that you don't have anymore when you are removed from a group.
I hope this summary helps you understand the complexity of the situation at hand. Depending on the individual setup of your environment, you can see no / limited / very heavy impact. The best thing you can do is check how your group membership impacts the configuration of permissions in the project(s) you are leaving. And also, be clear about how you want/need to remain involved with them after you get reorganised 😅. That will help determine if there's any impact and how it should be resolved.

When you are removed from the "Browse Project" permission of a project, you will not get any notification because Jira checks to see if you have permission to see the ticket before sending the notification out. So it does not matter if you are assignee on a ticket, if you do not have "Browse Projects" permission, you will not get any notification.
