What are the impacts if I remove 1 user to be an organization admin?

We are trying to limit the admin roles in our company and would like to know the impacts if some of our users have created projects and would like to downgrade their role from being an organization admin to a team member only.

They would lose their organization admin abilities (https://support.atlassian.com/organization-administration/docs/explore-an-atlassian-organization/).  It will not impact the projects that they created and should not impact their access to those projects.
