It depends on the nature of the apps that you installed and checked the usage based on the configurations and associated projects or components.
It's NOT recommended, but the most effective way would be to disable an app that is unlikely to be used by anyone for a week or two and check if someone complains or shouts at you after a week or two.
As a best practice, tracking who requested a specific app and the use case scenario on a Confluence page is always good. Check with the original team annually if the team is actively using an app.
