I'm hoping to sort my kanban board by created date where the newest items are at the top of each board. Ideally by latest update or created date.
Currently, my kanban board is sorted by oldest created date at the top of each board and newest at the bottom.

One option is to create a second Jira Software board where you could change the sorting. Here is an article to help guide you if you decide you want to try that.

Are you working with a Team Managed project or a Company Managed project? That information will show at the bottom of the panel on the far left.
Are you working with a Work Management project? I ask because you posted your question in the Work Management Questions forum. If you see options across the top of the screen like Summary, Board, List, etc. then you are working with a Work Management project.
If you are in fact working with a Work Management project it is not possible to set a sort order for the issues. You can change the order manually by dragging issues up and down the column, but you can set a fix sorting order.

And can you confirm if you are working with a Software project or a Work Management project?

In that case, as I said, it is not possible to set a sort order for the issues. They are sorted by Rank, with new issues being automatically set to the lowest Rank as they are created.
You can change the manually re-Rank issues by dragging issues up and down the column, but you can set a fixed sorting order.

I'm working on a team managed project. Maybe you can add this feature because there is no meaning sorting the issues regarding their rank in a Kanban board, especially in done status columns. (If you don't use sprints this is much more important). The most up-to date issues should be shown at the top, at least you should give an option to users to be able to sort it according to their preferences. This preference should be column based since it can differentiate according to the columns(status based)
