Using the Default Renderer for a Paragraph field in Jira

I need to create a multiline text field in Jira Software that does not use the Wiki Style renderer. However, when I attempt to follow the typical guidance for turning off the renderer (navigating to the Field Configuration, finding the field, clicking 'Edit', turning off the renderer), there is no option to remove the renderer.

Is there a way in Jira to create a multiline text field that does NOT use Rich Text?

Per the following article, plain text rendering is being deprecated for paragraph (multi-line) type fields.

We’re removing the default text renderer in Jira
