I would like to know whether it is a good practice to hold only with Workflow status and avoiding subtasks and use only stories and tests with clear acceptance criteria, will this work? want to know the pros and cons of this practice.

You should create sub-tasks only if you have tasks which involve long activities.

As long as you have defined tasks in such a way that they are small and can be easily tracked without the need to be disintegrated into sub tasks, you do not need to create the sub tasks.
