Using Projects and how notifications are sent to "owners"

I'm reading over the documentation for Jira Projects, specifically for notifications.  Under the weekly reminder portion it says for Projects, "Project owners will get a reminder weekly on their Friday to post their weekly updates."

And for Goals, "Goal owners will get a reminder on the 1st of each month for their monthly goal updates. Goal updates are due a week later."

Both of these indicate multiple ownership for the Project, however, in under Jira Projects, the Owner field only allows one name.  What other fields and/or how do I identify more than one Project owner?

The way I interpret this is that "project owners" mean the project owners across all projects in the site, not that a project can have more than one owner. I don't use Goals so I don't know if those can have multiple owners though.
