Unable to get email address via REST API

We are implementing an integration between ServiceNow and JIRA cloud and we are unable to get email address from assignee field and reporter field in JIRA. Only displayName is available. Kindly advise how we can obtain email address via REST API. We are using Script Runner's Script Listeners to write REST API calls. Kindly let us know how we can obtain the email address of the Assignee/Reporter. We are trying it from an Org Admin account.

I'm not sure if it is possible to get a user's email address via REST API after reading this.
