Two workflow schemes on one sprint board

Is it possible to have a workflow scheme associated to a particular issue type and then display those two workflow schemes on the same sprint board?

I would like to have different workflow for say Documentation issue and a different workflow for Development issue. 

I would like to display them both on the Sprint page, but with different workflow headings. For example Development may be as simple as In Progress & Complete, whereas, Documentation may have a scheme of In Progress, In Review, Complete.

Very much so, yes.  You can have the same, partial overlapping or no status in common between two workflows and represent both on the same board. You can then put status from each workflow into the same or different columns.

I have managed to assign Workflow scheme to Issue Types, however I am unable to see the Issue Types with a different Workflow scheme on the Sprint Board. How do I display the different Workflow schemes on the Sprint Board?

You don't really.  Boards draw in issues from projects, they don't work with schemes directly.

Have a look at the board configuration and check the filter the board is using to select the issues it displays.  The filter needs to include all the issues you want to see - it sounds like at the moment it's doing something like "issue type = X" or only selecting from one project when you need it to look at two.
