Track how many times the Target End date changed

Is there a way to report on how many times the Target End data changed for projects? For example, if the Target End date changed 3 times for a project, I need to display the number “3” on the reporting dashboard.
I understand there is no out of the box way to do it in Jira cloud. I CANNOT use 3rd part apps. So it’s either through plugin or API. What plugins have this functionality (Time in Status?) or are there any resources on how to write a REST API to achieve this?
