I see that a ticket from future sprint has been moved to my current sprint. I can see that the history shows that I did it, but I am very confident based on the timings that it shows that I didn't, since I was driving to the pharmacy at that point and was on call with family. What else can I check to see how this was changed. Does JIRA like most websites track IP address and Laptop ID? Can they be tracked somehow to check where was this done from? I am very confused as to how this is possible.

You might try the workflow for the issue. If there is something that would cause that to move, it might be in there and possibly would show you as the person performing the action. But it is suspicious that it also ranked the issue higher at the same time.
Ticket history never lies unfortunately. You might have some automation or misclicks that could have caused this. Regardless, ticket history is absolute.
