The old version allowed you to actually practice doing transactions is this still available? I want to actually set up and do transactions like a service request

I'm not sure what you mean by "practice". Can you provide any additional detail. Also, what do you mean by the "old version". There is no customer visible "versioning" of the Jira Cloud product since updates are being released on a continuous basis. Do you perhaps mean the self-hosted Server/Data Center product?

In order to work through the actual use of features you would need to create projects (now called Spaces), create work items, and move them through the workflow. You can choose not to use those Spaces for production work, and set up separate Spaces for your production work.
