I am trying to setup a simple automation the converts a incoming email request from a specific email into a Task.
When i do some testing i get the error The issue type selected is invalid. (issuetype)). Below is a screen shot of the automation rule in me Dev project
It is a very simple rule, i know but just need a simple change to happen when a issue is raised via email.
Any help would be great.

Can you share a screenshot of the details of how you are editing the Issue Type? Also for the work item created - does the issue type for it have the same workflow as the issue type you are trying to change it to? Or are they different?

Apologies but i am not 100% sure i understand the 2nd part of your question regarding workflow, i am still new it jira and learning the ins and outs of the back end of it.

Thanks for sharing the screenshots. Automation rules don't currently have the ability to do a Move function between Issue Types if the Issue Types are connected to different Workflows. If they use the same workflow then you can do a simple edit like you are doing. What is the work type/issue type of the issue that was created?
Then check the workflow scheme attached to the space/project and see if the different work types use different workflows.

When the request comes in it is a (system) Service request.
I have a suspicion the workflows will be different, looking the the workflow diagrams for Task and Service request they are two very different workflows. So i then assume what i want to do will not work?

That's correct. So, you should review both workflows to see if that are really that different - maybe you can use the same workflow for both. Then you could do it.
