If a task is no longer in the Backlog or Ready status, it simply disappears from the backlog view!
This is both absurd and wrong, because it effectively prevents users from reordering stories—if priorities change, for example—or from removing a work item from the board.
Is there a way to tone down this filter and restore a more accurate backlog view?

From the information you provided to @Anandhi Arumugam _Cprime_ it looks like the Kanbam board is working as expected.
The backlog view shows what tickets have not yet been started, in your case work items in ether Backlog or To Do, to remove an item from the board you would have to transition it to Backlog or To Do on the ticket itself assuming your workflow allows this.
If you want to change the priority of tickets already on the Kanban board, you can use the list view and as long as the filter for the board is ordered by rank you can adjust the rank / priority / position in the list using the 6 dots drag and drop to the left of the checkbox for each work item.

it's not a correct behaviour, as I cannot edit the priorities via backlog.
furthermore there is no chance to work with the list as you are suggesting as
1) we do not use priority as a metric (none working in agile should do that)
2) in the list view I keep seeing just the TODO-BACKLOG tasks as in the backlog view...

For a Kanban backlog, which is what you're asking about, in-progress items are, by definition, not in the backlog - you've started work on them, so they're on the board.
So, as I stated, the Kanban board backlog is working as expected.
On the other hand Scrum board backlogs show all work items that are not done (or were done in the current sprint), as you sometimes want to move work items in or out of Sprints, and it sounds like this is what you were expecting in a Kanban backlog.
However, if you're only seeing To Do and Backlog work items in the list view then it is possible that your board filter or sub-filter is excluding items in other statuses, unfortunately until you provide information about your filter we can't comment on that.

Maybe thanks to your hint I figured out the proper filter setup in order to show just STORIES (simply "not done") in order to have them re-arrangeable via LIST view.

PS: I still believe as per Scrum view, the Kanban backlog view shall inherit the same logic.

Glad to hear it, and you're not the only one to think that the Kanban and Scrum views should share the logic, there have been a few discussions here about that across these forums.

Have you checked
1. The board Settings to see what statuses are mapped to your Board columns? Are the statuses Backlog and Ready included in the columns?
2. Does your Board filter exclude issues in Backlog or Ready status specifically?
