If you have a task with sub tasks, can you add the task and some of the subtasks to a sprint but keep some subtasks in the backlog?

I don't believe this is possible, nor really advisable when using sprints as a way of iterating on work.  You can get the same effect you are seeking by raising the level of each issue "up"... turn the parent task into an epic, and turn the sub-tasks into child tasks, and then they are eligible for placement into seperate sprints and the epic will contain all of the work, for as many sprints as it takes.

No, not really.

The "Sprint" field's value is inherited by the sub-tasks from their parent task.
