Statuses between issues only update automatically if there is some automation doing this. There are several ways to set this up, but most commonly, automations like these are defined with rules, that you will most likely find in your project settings.
In the project where you see this behaviour, navigate to project settings > automation. See if you can find an automation rule that syncs statuses to epics. After disabling that rule (using the enabled toggle next to it), the automatic updates should stop.
