First, I'm new to Jira administration, but I've searched for others having this issue and haven't come across the problem yet.
I have a user who wants to configure his board estimation based on Story Points, however, our instance of Jira Cloud does not have Story Points as an option, rather it only has Story Points Remaining, Original Time Estimate, Sprint Points Accomplished, Task Progress, and Issue Count. When clicking the link to "read more about estimation and tracking" it shows the Story Points option in the documentation. Why are we missing this field?

You note that you are new to JIRA admin role, so I wonder if there was a site admin before you. If so, did they either rename Story Points as "Story Points Remaining", and/or remove the default Story Point field from your project's views. Maybe ask them before making changes to understand why they made any changes.
You can also use the Admin Helper features to try to find missing fields. Here is the information on that tool:

for the time being, we are exploring the use of a custom field named Story Points. Once added to the screen, we can select it in the estimation drop down list. I don't understand why the documentation says the following if the field does not exist at all?
Story points
Estimation will be based on the number of story points per issue. This is the most commonly used option.
By default, the 'Story Points' field is only available to issues of type 'story' or 'epic' (not 'bugs' etc).

There are actually a number of Related community content suggestions about the same problem, but none actually solve my specific issue. I've tried adding the Story Point to the screen, but its not available as an option and this is in a classic project vs. next gen.
