Separation of projects and users for different organisations

I want to create projects in the Jira Cloud for different companies. This requires that project details, users and all sensitive information are only visible to users assigned to the projects.

Is this possible? In the free edition I can only specify users in the administration interface.

Yes. Users are associated to projects under the Project settings > people. You could define groups for each client under the Admin area > User management > groups then use these groups under the project People section.
