Security level per team

I created a team, and we want to associate the different teams we created on prod with a security level so teams can choose to have issues that are only visible to the team they choose. Is this possible?

Yes, it is possible and your question is similar to this one, https://community.atlassian.com/t5/Jira-Service-Management/Configure-custom-field-quot-Team-quot-to-have-multiple-sub-teams/qaq-p/2724134. All you have to do is create a issue security scheme and then either manually set the security level on the issue or use automation to do it. Check out this KB for more information, Configure issue security schemes.

Where do you not see team? On the screen or in the issue security section? Currently you would have to maintain a group with the same members as in the team since Team cannot be selected in the issue security. There is a suggestion to have team added, see JRACLOUD-81399.
