What is exactly the difference between Atlassian solutions: SAAS and Cloud? Is the SAAS like the Atlassian Data Center on cloud? How I request a trial access for the SAAS and can I find documentation?

No, I think you've mixed up a lot of old documentation or misread some guides.
Atlassian don't have a product they call SAAS, but Cloud could easily described as such a system. Server and Data Centre are different products (DC is Server+), related to, but not the same as Cloud.
In short, sign up for Cloud if you want a service without worrying about hardware.
SaaS and Cloud, in general, is the same. I don't know if Atlassian has defined their Cloud service differently but again, in general, it is the same functionality. Cloud is just a marketing term to describe SaaS. They both follow the subscription model. The only difference that would pose a real question is whether or not SaaS or Cloud can be locally maintained or it has to be maintained by Atlassian, and what is the extend of that maintenance?
