is there some "how to" to find ?

Shall i do in steps to 8.1 first or anyone who can help out in this update :-)

Shall i go to 8.12 insted  - steps ?

The decision about version is not one I have a really simple answer for.   Yes, "latest" is (almost always) a good move, because it's "better" than older versions on many levels.  I have a slight reservation about using x.y.0 releases, as they have only really been tested by Atlassian and often have problems that Atlassian never saw from their testing, when they go out to the real world.  I happily test with x.y.0 but generally would never put a production system on x.y.0, always waiting for x.y.1 or above to avoid stuff.

However, I would also take a good look at the "Long term support" versions - they are often a lot more suitable for an organisation - less upgrading, more stable, and get patched and updated for a lot longer.
