I need to run a report that can tell me how many tickets are/were in each category for a selected period of time.

Here is an alternative, if you already have a reporting app eazyBI for Jira, you can use it to analyze issue status transitions over past periods. For example, how many issues were in To Do, In Progress, or Dones statuses at the end of each period, or create a cumulative flow diagram (see pictures below).

What do you mean by "category"?
If you mean the columns/statuses for a team's board, you may want review Jira's interpretation of a Cumulative Flow Diagram (CFD). This shows the count of issues in a particular status over time. Please look here for information about that report:

By category I mean the board column. So I would like to know how many tickets were in each column for a given time period, ie how many tickets were moved to the completed column. Does that make sense? Thanks for your help!

The CFD will show you the count of issues...in a status/column...at a point in time. It helps to see issues with flow in your team's value stream.
It will not show the amount of time spent in a column, although you can infer that reading the report. To see information about the amount of time issues spend in a status/column, please review Jira's interpretation of a Control Chart: https://support.atlassian.com/jira-software-cloud/docs/view-and-understand-the-control-chart/

Jira comes with in-built reports and you could use the Dashboard with Gadgets to create your custom report - Have a look at the reporting documentation .

Thanks Ajay. The reporting documentation does show some reports that I believe would provide the information I need. However, those reports do not display in my report menu. I am not sure how to get access to these reports.
