What is the best way to determine when a setting in Jira is the default versus configured/custom?
I am new to Jira and working in a system that has been customized. I would like to restore the site to as close to the original settings as possible. We need to retain two projects and I understand the settings on the projects will limit what I can restore.

Having any third party apps installed is already a customization in my opinion because they add functionality and features on top of Jira out-of-the box/
How about the creation of "custom" fields?
Please note that reverting to a "standard" Jira will result in data loss and a lot of field/workflow remapping.
What do you consider as custom?
Jira is designed to be customized, whether it is fields, workflows, notifications, etc.

The challenge I am navigating is making a decision based on whether the setting was changed or customized from the original platform settings. Essentially, I want to know how Atlassian set up the system OOTB.
For example, when I remove custom fields, I know they are custom. When I work with issues and flows, it's not always obvious (to me in this instance) what was configured and what was customized.
